Adipic acid is a low-acidity, nonhygroscopic food acid with strong pH 2.5–3.0 buffering capacity. It delivers smooth tartness, enhances grape flavor persistence, and inhibits fruit browning, making it ideal for dry powdered foods and gelatin products.

Adipic acid is a stable, nonhygroscopic food acidulant (pH 2.86 at 0.6%, solubility 1.9 g/100 mL at 20°C). Used in beverages, desserts, baking powder and canned foods, it provides excellent pH 2.5–3.0 buffering and prevents edible oil rancidity.
