Oleic acid (CH₃(CH₂)₇CH=CH(CH₂)₇COOH) is the most abundant natural monounsaturated fatty acid, derived from oil and fat hydrolysis. Its glycerides are the main constituent of olive oil, palm oil and lard; industrial grade contains 7–12% saturated fatty acids and trace linoleic acid. A colorless oily liquid, it has defined specific gravity, solidification/boiling points, refractive index, iodine value and acid value as specified.
