Product Application of Sodium alginate CAS#9005-38-3

Sodium alginate is a seaweed-derived gum and the sodium salt of alginic acid. It is soluble in both cold and hot water, and can form solutions with different viscosities. It forms irreversible gels when reacted with calcium salts or acids. It functions as a thickener, binder and gelling agent, widely used in dessert gels, puddings, sauces, toppings and edible films. In ice cream, it acts as a stabilizer to deliver creamy texture and prevent ice crystal formation.


