D-(+)-Glucono-1,5-lactone (GDL) is mainly used as acidulant. It hydrolyzes slowly in water to form gluconic acid and adjust pH value. Its acid releasing rate is affected by temperature, concentration and initial pH, slow at room temperature and faster under heating.
